Spaghetti Squash is by far one of my favorite things to make as a single gal because I can get quite a few meals out of one medium sized squash.

Here is how I prepare mine:

In a crockpot I put the whole squash in lengthwise with about a cup and a half of water.

Cook on low for 4 to 6 hours.

Remove from Crockpot and allow to cool for about 15 minutes or until cool to the touch.

Cut in half and remove seeds carefully.

With a fork, scrape the meat of the squash out in to a seperate bowl.

My two favorite to enjoy this dish is with just lemon juice and pepper but it is also tasty with your favorite spaghetti sauce. I also like to toss in some chicken if I am looking to add protein.
